Traditional Boiled Lobster
Pour at least ½ gallon (2 litres) of water into a large pot. Add ½ cup of sea salt per gallon of water.
Bring the salted water to a rolling boil. Carefully drop in the lobsters, one at a time, head first into the rapidly boiling water. Lower the heat, cover the pot, and simmer for approximately 15 minutes for 1 to 1¼ lb lobster and approximately 20 minutes for 1½ to 2 lb lobsters.
A general rule of thumb: When the antennae pull out easily, the lobsters are done.
The most humane way to cook lobster is to sedate them first by putting them in the freezer for a few minutes prior to putting them in the boiling water.
